Squash Dressing

Nice side dish that is perfect for any occasion.
Ingredients -
2 cup cooked Yellow Squash, cooked soft, drained well
3/4 stick Butter
2 Eggs
1 teaspoon Salt
1/2 teaspoon Pepper
1 cup chopped Yellow Onion
1 cup shredded Cheddar Cheese
1 cup evaporated Milk
2 cups Cracker Crumbs
1 teaspoon Dried Parsley
 
Preparation:


1. Preheat oven to 375 F.

2. Place squash in large bowl. Mash with potato masher.

3. Add butter, eggs, salt, pepper, yellow onion, cheddar cheese, milk, cracker crumbs, and dried parsley.

4. Stir to combine.

5. Spoon into greased baking dish.

6. Bake 40 minutes.

 



Cooking Tip
Cheddar Cheese
Substitute your favorite cheese for the cheddar. A cheese such as Monterrey Jack or a Mexican blend would be a nice choice.

Yellow Squash

Remove some of the water from the squash by cutting the squash lengthwise, salting it lightly and placing it in a colander.
