Summer squash, white onion, green chilies, sautéed until soft and topped with sharp cheese.
Ingredients -
5 cubed small Summer Squash
1 large White Onion, diced
2 Roasted, Peeled Green Chilies
1 tablespoon Shortening
1 cup shredded Longhorn Cheese
Preparation:
1. Add shortening to large skillet. Sauté onion until soft.
2. Add squash cubes and cook until crisp tender.
3. Add green chilies and heat through.
4. Sprinkle Longhorn cheese over top.
5. Serve hot.
Cooking Tip
Longhorn Cheese
Substitute Monterrey Jack or sharp cheddar for the Longhorn cheese if necessary, or desired.

Winter Squash
Winter squash need to ripen. Be sure your squash are ripe before cooking. The darker the exterior skin, the better chance your butternut or acorn squash is ripe.
