Spaghetti Squash With Garlicky Sausage

Spaghetti squash combined with turkey sausage, tomato juice, garlic, and shallots pan roasted.
Ingredients -
1 medium Raw Spaghetti Squash, cut in half lengthwise
6 ounces Uncooked Turkey Sausage
4 tablespoon Tomato Juice
6 cloves Garlic, minced
6 fresh Basil Leaves
1 small Shallot, peeled and diced
2 teaspoon Extra Virgin Olive Oil
 
Preparation:

1. Preheat oven to 375 F.

2. Scoop seeds out of squash. Place squash on baking sheet, cut side down.

3. Bake 40 minutes.

4. Heat oil in skillet and sauté shallots and garlic.

5. Add turkey sausage and continue cooking until browned.

6. Scrape squash flesh into skillet with fork.

7. Stir in tomato juice and fresh basil.

8. Season to taste with salt and pepper.

9. Serve hot.

 



Cooking Tip
Turkey Sausage
Substitute your favorite type of sausage, but be careful not to let the fat ruin your dish. It might be wise, if using a sausage other than turkey based to brown separately, and then add to the dish.
