Salsa Butternut Squash

 
Ingredients -
1 Pound Butternut Squash, peeled, seeded and cubed
1/4 Cup Yellow Onion, finely chopped
1 Garlic Clove, minced
1 Tablespoon Butter
2/3 Cup Salsa
1/2 Teaspoon Sea Salt
1/2 Cup Cheddar Cheese, shredded, divided
 
Preparation:

1. Bring 1 inch of water to a boil in a saucepan.

2. Place the squash in a steamer basket over water.

3. Reduce the heat and cover and steam for 10-15 minutes or until the squash is tender when poked with a fork.

4. Sauté the onion and garlic in butter until tender in a large saucepan.

5. Stir in the salt, squash cubes and salsa.

6. Spoon half of the mixture into a greased 1-qt. baking dish.

7. Sprinkle with 1/4 cup of the cheddar cheese.

8. Top with the remaining squash mixture.

9. Cover and bake at 400 degrees for 15 minutes.

10. Uncover and sprinkle the top with the remaining cheese.

11. Bake for 5 minutes longer or until the cheese is melted and golden.
