Confetti Spaghetti Squash

An easy dish to prepare, this is great next to chicken or pork.
Ingredients -
1 medium Spaghetti Squash (2 1/2 pounds)
3 medium Tomatoes, seeded and chopped (1 pound)
1 tablespoon Butter
Freshly Grated Parmesan Cheese
 
Preparation:

1. Preheat oven to 350 F.

2. Cut spaghetti squash lengthwise. Scoop out seeds.

3. Place squash halves cut side down in baking dish.

4. Bake 35 minutes.

5. Use a fork to scrape out strands of spaghetti.

6. Scoop out squash flesh with spoon and add to saucepan.

7. Stir in tomatoes and butter, and heat through.

8. Season to taste with salt and pepper.

9. Sprinkle squash mixture with Parmesan cheese.

Spaghetti Squash
Spaghetti squash, baked whole about an hour and a half at 350 can be cut in half lengthwise and flesh scooped out. Serve hot with butter.

Choosing Squash

All varieties of squash will be heavy for their size. Squash should be free of bruises, firm and without wrinkles. Most soft skinned squash will be glossy and smooth.
