Chilled Squash Soup

Puree of yellow squash, onion, chicken stock, cream cheese and fresh ground black pepper.
Ingredients -
2 pounds Yellow Squash, thinly sliced
1 Onion, chopped
1 (14 ounces) can Chicken Broth
1 (8 ounces) package Cream Cheese, softened
1/4 teaspoon Fresh Ground Black Pepper
 
Preparation:

1. Add squash slices, chopped onion, and chicken broth to a large saucepan.

2. Bring broth to a boil.

3. Cover saucepan and reduce heat. Simmer 10 minutes.

4. Remove from heat and set aside to cool.

5. Spoon soup and cream cheese into blender in batches. Process until smooth.

6. Stir in fresh ground black pepper. Chill until ready to serve.
