Candied Acorn Squash

This is a really great dish on a cold winter day.
Ingredients -
1 Acorn Squash, halved and seeded
1/4 cup Butter, divided
1/4 cup packed Brown Sugar, divided
 
Preparation:

1. Place squash cut side up on microwave safe cookware.

2. Spoon 2 tablespoons butter and 2 tablespoons brown sugar into each squash half.

3. Cook on full power 8-10 minutes, rotating several times to ensure even cooking.

4. When squash flesh is soft and tender, scoop out flesh (with butter and browns sugar), and place in bowl.

5. Mash squash to blend ingredients.

6. Spoon squash mixture into serving bowls and serve hot.

Summer Squash
Chayote, patty pan, yellow crookneck, zucchini and straightneck are summer squash varieties, but can be found often year round.

Beta Carotene

Squash is an excellent source of vitamins, minerals, and beta carotene, one of the best anti-oxidants. Winter squash will develop additional beta carotene after being stored than immediately after picking.
